White Wine Macaroni and Cheese

Ingredients

  • 12 cups uncooked macaroni
  • 14 cup chopped onion
  • 3 tablespoons unsalted butter or 3 tablespoons margarine, melted
  • 3 tablespoons all-purpose flour
  • 34 cups milk
  • 14 cup dry white wine
  • 12 teaspoon salt
  • 1 pinch pepper
  • 12 cups shredded sharp cheddar cheese
  • paprika

Directions

  1. Cook macaroni according to package directions, omitting salt.
  2. Drain and set aside. (NOTE: Do NOT be tempted to skip this step! Trust us, we’ve done it so we should know!)
  3. Preheat oven to 350F.
  4. Sauté onion in butter in a heavy saucepan.
  5. Add flour, stirring until smooth. Cook 1 minute, stirring constantly.
  6. Gradually add milk and wine.
  7. Cook over medium heat, stirring constantly, until mixture is thickened and bubbly.
  8. Remove from heat; add salt, pepper, and Cheddar cheese.
  9. Stir until cheese melts.
  10. Add macaroni; mix well.
  11. Pour into a lightly greased 2-quart casserole dish.
  12. Sprinkle with paprika.
  13. Bake for 15 minutes; uncover and continue baking another 15 minutes.
