Rosé Poached Strawberries





  • 2 cups ros wine
  • 2 tablespoons honey
  • 2 thyme sprigs
  • 1/2 vanilla bean pod
  • 1 pound fresh strawberries, hulled and halved
  • Thyme leaves (optional)


  1. Bring first 3 ingredients to a boil in a saucepan. Reduce heat to medium; cook until syrupy and reduced to about 1 cup, 12 to 15 minutes.
  2. Split vanilla pod in half lengthwise; scrape seeds into wine mixture. Add pod to mixture. Stir in berries. Reduce heat to low; cook 2 minutes (mixture will not come to a simmer).Remove from heat; pour mixture into a bowl to cool completely. Discard vanilla pod and thyme sprigs. Optional: Garnish with thyme leaves.
