Rum and Coke Chicken Wings

Ingredients

Wings:

  • 2.5 lbs. chicken wings
  • 3 Tbsp. smoked paprika
  • 2 Tbsp. chilli powder
  • 1 Tbsp. Kosher salt
  • 1 Tbsp. garlic powder

Glaze:

  • 12 ounces Coca-Cola
  • 3/4 cup rum
  • 1/4 cup honey
  • 3 Tbsp. ketchup
  • 1 Tbsp. Worcestershire sauce
  • 4 Tbsp. butter
  • salt to taste
  • pinch of red pepper flakes

Instructions

  1. Preheat the oven to 375 degrees Fahrenheit. Mix the dry rub ingredients together.  Place the chicken wings in a large bowl and toss with the spices. Cover and marinate for at least 15 minutes, or overnight (in which case you’ll want to put them back in the refrigerator to marinate).
  2. In a medium sauce pan, add in the Coca-Cola®, rum, honey, ketchup, and Worcestershire sauce. Allow to simmer and cook down for 20 minutes, or until thickened. Add in the butter and remove from heat.
  3. Add the wings to a sheet pan coated with parchment paper.  Bake for 25 minutes, or until cooked through. Pour the thickened sauce over the wings. Return to the oven to cook, 30 minutes, flipping the wings once or twice to make sure they stay coated. The wings will be done when they are dark and sticky.
  4. Enjoy as is, or with ranch and hot sauce!  Be sure to provide plenty of napkins.  You’ve been warned!
