Traditional Classic Eggnog

Yields: 12 servings

Ingredients

  • 6 eggs separated
  • 1/4 tsp (1 mL) salt
  • 2/3 cup (160 mL) sugar
  • 3/4 cup (180 mL) light rum
  • 1 tsp (5 mL) vanilla extract
  • 2 cups (500 mL) 35 % cream
  • 2 1/2 cups (625 mL) Milk
  • Freshly grated nutmeg

Directions

  1. Beat egg whites and salt until stiff peaks form; set aside. In another bowl beat egg yolks until light. Gradually add sugar and continue beating until thick and lemon coloured. Slowly stir in rum and vanilla.
  2. Whip cream until softly stiff. Fold whipped cream, then egg whites into yolk mixture. Gently stir in milk.
  3. Serve well chilled with freshly grated nutmeg on top.
