Leeuwenkuil Shiraz 2013 with the Eggplant Lentil Stack
- Red Onion,
- Cherry Tomatoes,
For the eggplant
Heat half of the oil in a large pan over medium-high heat. Add the eggplant and zucchini and cook for 6 minutes on each side or until cooked through. You may need to do this in batches to avoid over-crowding your pan.
For the lentils
In a large bowl combine the lentils, red onion, and cherry tomatoes. Drizzle with the red wine vinegar and the remaining oil. Season with salt and pepper.
Place 1 slice of eggplant on the plate and top it with a slice of zucchini then the lentil mixture. Top each layer with some feta and continue layering with remaining eggplant, zucchini and lentil mixture. Serve with a side of rocket. ENJOY!
