Cabernet/Merlot Walla Walla

The Walla Walla appellation is very special. Its outstanding reds were what first put Washington on the world wine map. The wines are now grouped with world standard reds from Bordeaux, Napa and Sonoma. Walla Walla Cabernets and Merlots consistently rank in top 10 lists of the finest from the Americas.

Our Bare Ridge offering is the classic Bordeaux blend of Cabernet and Merlot but typifies the unique Walla Walla profile of intense fruit and spice flavours and aromatics. Notes of currant, cherry and plum are backed by hints of black pepper, anise and coffee. Two-stage French and Hungarian oaking nicely mellows the tannins and adds a suggestion of tastiness.

Chilean Carmenere

  • Aging: best enjoyed young
  • Some viticulturists have referred to northern Chile (where Carmenere comes from) as the perfect territory for wine cultivation, with its mild temperatures, low amounts of rainfall, minor risk of spring frost, and harsh, rocky soil surrounding lush, green valleys.
  • Chile is currently the fourth-largest exporter of wine to the United States, trailing France and Italy and only recently being surpassed by Australia.
  • The Carmenere grape was originally grown in France. The grape eventually became extinct, as France did not have the appropriate growing conditions. The grape accidently resurfaced in Chile, as South American growers took what they thought was Merlot rootstalk but ended up being a Carmenere rootstalk from France and planted it in Chile. The grape grew extremely well in Chile and is now considered Chile`s signature wine.
  • Chile has been producing wine for over 500 years
  • Too heavy for chicken but not heavy and tannic enough for beef. Therefore, Carmenere is often paired with meats like duck and veal.

Red Mountain Cabernet Sauvignon

Red Mountain was not officially recognized until it received AVA (American Viticulture Area) status in 2001. The AVA status was granted in recognition of the area’s unique soil and climatic conditions creating a taste profile in its red wines that is truly distinct to the region.

The vineyards have high calcium carbonate content in their soil. This imparts a distinctive chalkiness in Cabernets. The chalkiness combines with the powerful dark fruit qualities of the grape to create the big, chewy mouth-feel that is a clear signature of Red Mountain Cabernet. Another distinction is a hint of orange peel or Grand Marnier-like aromatics and flavours. Together these two traits make Red Mountain Cabernet immediately recognizable, highly prized, and much sought after.

Red Mountain is one of America’s smallest AVA’s. We estimate that only about 800 tons of Cabernet were harvested at Red Mountain in 2007. Red Mountain Cab is so rare that you have not been able to purchase it in Canada in any form – until now.

Fermentation on Red Mountain Cabernet Crushed Grapes and our two-stage Hungarian oak process delivers all of the body, aromatics, and flavours that make Red Mountain Cabernet such a standout. Purchase the best corks that you can find, and be disciplined enough to age the wine at least 1 year; then save some to enjoy after 2, 3, or 4 years in the bottle. A wine for your best cuts of beef or lamb and luckiest friends.

  • Aging: ages very quickly allowing it be enjoyed young
  • Located south of the Cantabrian Mountains along the Ebro river, La Rioja benefits from a continental climate. The mountains help to isolate the region which has a moderating effect on the climate. They also protect the vineyards from the fierce winds that are typical of northern Spain. The region is also home to the Oja river (Rio Oja), believed to have given the region its name. Most of the region is situated on a plateau, a little more than 1,500 feet (460 m) above sea level.

Italian Reserva Pinot Grigio

A star variety from the Alto-Adige area of northern most Italy. Medium bodied. Lively, fresh citrus notes. Subtle spiciness. Lots of appeal! Usually enjoyed young, but may be aged for several months.

Washington Reserve Harvest Riesling

The mature Riesling grapes from Cherry Hill Vineyard in Washington provide the foundation for this luscious wine. Our “Flavour Reserve” adds a concentration of tastes and natural sweetness that make late-picked wines so special. Notes of honey, apple and apricot dominate the aroma and taste, right through the long, rich finish. Displays much of the complexity of an Ice Wine, but with less sweetness.
